Spicy Cajun bacon-wrapped scallops - perfect for a crowd!
Ingredients:
  • 10 slices bacon
  • 10 sea scallops
  • 1 teaspoon Cajun seasoning
  • 1 lemon, cut into wedges
Instructions:
  • Lay bacon in a big skillet and cook on medium-high heat, flipping occasionally, until lightly browned but still flexible, for about 5 minutes. Transfer the crispy bacon to paper towels to drain.
  • Take a slice of bacon and wrap it around a sea scallop, securing it with a toothpick. Sprinkle with Cajun seasoning.
  • In a clean skillet, heat olive oil over medium-high heat, sear scallops and bacon until golden and crisp on both sides, about 3 to 4 minutes each. Squeeze lemon juice over scallops and serve hot.
