Quick and easy Mexican bean and cheese omelette with fresh spinach.
Ingredients:
  • 12 eggs
  • 18.40 gm oil
  • 420g can Heinz® Beanz Creationz™ Fiery Mexican Style Beanz
  • 80g (2/3 cup) grated tasty cheese
  • 50g baby spinach
  • Fresh chives, snipped, to serve
  • Fresh flat-leaf parsley sprigs, to serve
Instructions:
  • First, preheat the grill to high heat. Next, crack 3 eggs into a small bowl and gently whisk them with a fork until they are just combined. Finally, season the eggs generously.
  • Warm 1 teaspoon of oil in a 20 cm non-stick ovenproof pan over medium heat. Pour in the egg mixture and cook for 20 seconds until the base slightly sets. Gently fold the edges towards the center with a spatula, then shake the pan to spread the egg across the base. Sprinkle 2 tbsp of cheese, a handful of spinach, and 1/4 of the Beanz Creationz™ on top. Place the pan under a preheated grill and cook for 3 minutes until golden brown and the egg is fully set.
  • Gently fold the omelette to cover the filling, then elegantly transfer it to a serving plate. Repeat to create a total of 4 omelettes. Serve with a delightful chive and parsley salad.
