Ingredients:
- 250g cherry tomatoes
- 200g grape tomatoes, halved
- 2 vine-ripened tomatoes, chopped
- 125.00 ml fresh basil leaves, torn
- 1 long red chilli, finely sliced
- 1 large green capsicum, chopped
- 500g beef sausage
- Crusty bread, to serve
- Salad leaves, to serve
Instructions:
- Preheat your oven to 220°C/200°C fan-forced. In a large baking dish, combine tomatoes, basil, chilli, capsicum, and oil. Season with salt and pepper, then mix well. Place sausages on top.
- Roast sausages in the oven for 20-25 minutes, rotating them occasionally until fully cooked. Enjoy with crusty bread and fresh salad greens.
