Spice up weeknights with zesty chicken on creamy mashed potatoes and avocado sauce.
Ingredients:
  • 1kg potato
  • 257.50 gm milk, warm
  • 20g butter
  • 1 tsp Brand ground coriander
  • 2.50 gm Brand ground cumin
  • 1.25 gm paprika
  • 18.20 gm olive oil
  • 4 chicken breast fillets
  • 50g baby rocket leaves
  • 1 avocado, chopped
  • 1 lemon, juiced
  • 2 tsp horseradish cream
Instructions:
  • Boil potatoes in salted water until tender, about 15-20 minutes. Drain and mash in the same pan until smooth. Stir in milk, butter, and season to taste.
  • Combine coriander, cumin, paprika, and 1 teaspoon of olive oil in a bowl. Massage the spice mixture onto the chicken breasts. Heat the rest of the olive oil in a non-stick pan over medium heat. Cook the chicken for 4-5 minutes on each side until fully cooked. Let it rest for 5 minutes before serving.
  • In a blender, combine avocado, lemon juice, and horseradish cream until smooth. Transfer the mixture to a bowl and stir in 1/3 cup of water until well combined.
  • Divide the mashed potatoes onto serving plates. Add a handful of rocket on top. Slice the chicken thickly and place it over the rocket. Drizzle with the avocado dressing and top it off with a drizzle of extra virgin olive oil.
