Chef John's quick and easy spicy chicken and rice noodle bowl is packed with veggies and a flavorful sauce, perfect for a speedy meal.
Ingredients:
  • 1 large carrot, finely sliced or shredded
  • 2 cups shredded green cabbage
  • 1 red bell pepper, thinly sliced
  • 2 jalapeno pepper, seeded and minced
  • 0.5 cup chopped green onions
  • 3 cloves garlic, finely crushed
  • 0.5 cup chicken broth
  • 0.25 cup seasoned rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon soy sauce, plus more to taste
  • 1 tablespoon ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon sriracha hot sauce, or more to taste
  • 1 teaspoon red pepper flakes
  • 1 (8 ounce) package dried rice noodles
  • 1 pinch salt
  • 8 ounces cooked chicken breast, torn into bite-size pieces
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 0.5 cup freshly chopped cilantro
Instructions:
  • Combine carrots, cabbage, bell pepper, jalapeno pepper, green onions, and garlic in a vibrant mixing bowl.
  • Combine chicken broth, rice vinegar, hoisin sauce, soy sauce, ketchup, brown sugar, sriracha sauce, and red pepper flakes in a separate mixing bowl.
  • In a large mixing bowl, soak the dry rice noodles with 6 cups of boiling water and a pinch of salt. Allow the noodles to soften for about 10 minutes, stirring occasionally. Next, drain and rinse with cold water, then thoroughly drain again. Transfer the noodles to the mixing bowl and mix in the shredded chicken, drizzling with sesame oil and tossing to coat.
  • 1. Heat a large skillet over high heat and drizzle in vegetable oil. Once the oil is shimmering, add the vegetable mixture and sauté until hot and steamy, for about 1 to 2 minutes. 2. Pour in the sauce and cook over high heat until it starts to bubble, which should take around 1 minute. 3. Add the noodles and chicken to the skillet and stir well to combine, ensuring all ingredients are heated through, approximately 1 minute. 4. Remove the skillet from heat and stir in the chopped cilantro. Enjoy!
