Spicy Orange Zest Beef

Decadent and simple stir-fry, ideal for a mouthwatering dinner when paired with rice.
Ingredients:
  • 1 pound beef tenderloin, cut into 1/2 inch strips
  • 0.25 cup orange juice
  • 0.25 cup seasoned rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon hot chile paste (such as sambal oelek)
  • 1 tablespoon brown sugar, or to taste
  • 2 cloves garlic, minced
  • 0.25 cup water
  • 1 teaspoon cornstarch
  • 2 tablespoons grated orange zest
  • 1 bunch green onions, sliced - white parts and tops separated
  • salt and freshly ground black pepper to taste
Instructions:
  • In a large bowl, mix together beef, orange juice, rice vinegar, soy sauce, hot chili paste, brown sugar, and garlic. Cover and chill in the refrigerator for 1 to 2 hours.
  • Drain the beef in a colander over a large bowl for about 5 minutes, ensuring it is thoroughly drained. Keep the marinade aside for later use.
  • Combine water and cornstarch with the flavorful marinade, whisk vigorously until the cornstarch is completely dissolved, then set it aside.
  • Heat skillet over high heat and spray with cooking spray. Add beef and cook for 1 minute without stirring, then cook and stir for an additional minute.
  • Add the delicate green parts of the green onion and fragrant orange zest into the mixture; sauté for 30 seconds.
  • Combine the marinade and green onion tops into the mixture, stirring continuously. Cook until the beef is fully cooked and the sauce has thickened, which should take approximately 2 to 3 minutes.
  • Season generously with salt and freshly ground black pepper.
