Ingredients:
  • 0.5 cup butter, softened
  • 1.5 cups packed brown sugar
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1 pear - peeled, cored and diced
  • 0.5 cup raisins
  • 0.5 cup chopped walnuts
  • 1.5 cups confectioners' sugar
  • 2.5 tablespoons lemon juice
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Cream the butter and sugar in a large bowl until silky. Add the egg and vanilla, and beat until combined. In a separate bowl, whisk together the flour, baking powder, cinnamon, and ginger. Gently fold the dry mixture into the batter. Finally, mix in the diced pear, raisins, and chopped walnuts.
  • Spoon cookie dough onto baking sheets, leaving 2 inches of space between each mound.
  • Bake until golden brown with a springy center, approximately 15 minutes in a preheated oven. Transfer to wire racks to cool.
  • Mix confectioners' sugar and lemon juice until smooth, then drizzle the icing over the cookies.
