Spicy pork meatball casserole

Spicy pork meatballs - freeze for quick, delicious dinners!
Ingredients:
  • 500g pork mince
  • 125.00 ml fresh breadcrumbs
  • 1.25 gm smoked paprika
  • Olive oil cooking spray
  • 1 medium brown onion, finely chopped
  • 1 medium red capsicum, chopped
  • 1 long red chilli, finely chopped
  • 5.00 gm ground cumin
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 100g baby spinach
  • Couscous, to serve
Instructions:
  • Mix together ground beef, egg, breadcrumbs, and paprika until well combined. Shape the mixture into 16 evenly sized balls.
  • Coat a saucepan with oil and heat over medium-high heat. Sear meatballs in batches for 4 to 5 minutes until golden brown. Transfer to a plate.
  • Sauté onions in the pan until softened, then add capsicum, garlic, and chili and cook until capsicum is soft. Stir in cumin until fragrant, then add tomato and 3/4 cup of cold water. Return meatballs to the pan and store in the freezer.
  • - Bring the mixture to a boil, then lower the heat and let it simmer uncovered for 15 to 20 minutes until the meatballs are fully cooked. Stir in the spinach and cook covered for an additional 2 to 3 minutes until the spinach wilts. Serve alongside couscous.
