Hoisin meatball and noodle tray bake recipe

Kid-friendly meatball and noodle traybake, quick and healthy.
Ingredients:
  • 3 green onions, trimmed
  • 500g pork and veal mince
  • 82.50 ml dried breadcrumbs
  • 1 egg, lightly beaten
  • 1/4 tsp dried chilli flakes
  • 3 garlic cloves, crushed
  • 3 tsp finely grated fresh ginger
  • 135.00 gm hoisin sauce
  • 100.65 gm oyster sauce
  • 1 bunch broccolini, trimmed
  • 1 bunch pak choy, trimmed, leaves separated
  • 400g packet fresh egg noodles
  • 125.00 ml fresh coriander leaves
  • Lime cheeks, to serve
Instructions:
  • Preheat oven to 220C/200C fan-forced. Set aside green part of onions. Finely dice white part of onions and place in a big bowl. Combine with mince, breadcrumbs, egg, chili, half of the garlic, half of the ginger, and 1⁄4 cup hoisin sauce. Season with salt and pepper, then mix well. Shape mixture into small balls using a tablespoon. Arrange them in a 4cm-deep metal baking tray. Bake for 10 minutes or until nearly cooked through.
  • Mix oyster sauce, 2 tablespoons of water, and the rest of the ginger, garlic, and hoisin sauce in a small bowl. Take out the tray from the oven. Pour half of the oyster sauce mixture over the meatballs and mix well. Place broccolini and pak choy on top of the meatballs. Pour the remaining sauce mixture over everything. Put the tray back in the oven and bake for another 10 minutes until the vegetables are tender.
  • Place noodles in a large heatproof bowl and cover them with boiling water. Let them sit for 2 minutes, then drain. Transfer the noodles to a baking tray and toss them to coat. Bake for an additional 2 minutes. Thinly slice the reserved green onion and sprinkle it along with coriander over the noodles. Serve with lime cheeks.
