Spicy salami bites

Whip up our quick and fiery salami bites in no time!
Ingredients:
  • 200g grape tomatoes, quartered lengthways, finely diced
  • 2 small eschalots, finely chopped
  • 1 tsp red wine vinegar
  • 24 slices hot salami
  • 200g fresh ricotta
  • 40.00 ml pitted kalamata olives, finely chopped
  • 40.00 ml finely chopped fresh basil leaves, plus extra small leaves, to serve
Instructions:
  • Preheat the oven to 220C/200C fan-forced and prepare a wire rack over a large baking tray with sides.
  • Combine the fresh tomato, eschalot, and vinegar in a bowl. Season with salt and pepper to taste. Let it sit to enhance the flavors.
  • Place the salami slices in a single layer on a wire rack and bake them for about 10 minutes until they are nice and crisp. Let them cool for 5 minutes before using.
  • In a bowl, combine ricotta, olives, and basil. Season with salt and pepper, then stir well to mix. Spoon 2 teaspoons of the ricotta mixture onto each salami round on a serving plate, being gentle to avoid breaking the salami.
  • Drain the tomato mixture, then spoon 1 teaspoon of it onto the ricotta mixture. Garnish with extra basil leaves and serve.
