Chef John's spicy Nduja spread combines Calabrian salami, pancetta, and hot chilies for intense flavor in just 5 ingredients.
Ingredients:
  • 4 ounces thinly sliced pancetta
  • 0.33333334326744 cup Calabrian chili peppers in oil
  • 12 ounces sliced salami
  • 2 tablespoons olive oil, or more as needed
  • 0.25 cup butter, at room temperature
Instructions:
  • Place the pancetta in a cold pan and cook over medium heat, tossing occasionally, until it begins to crisp up, about 4 to 5 minutes.
  • Discard pepper stems and seeds. Set aside 2 or 3 tablespoons of the oil.
  • Prepare the salami, pancetta, chili oil, and Calabrian peppers in a food processor. Pulse until finely ground. Incorporate olive oil and butter and process until creamy and smooth.
  • Move the spread into a bowl and cover it with plastic wrap. Refrigerate for at least 8 hours or overnight to enhance the flavors.
