Create a savory meat lovers' pizza using from-scratch dough and zesty sausage toppings.
Ingredients:
  • 687.50 ml plain flour, plus extra for dusting
  • 2 x 7g sachets dry yeast
  • 2.50 gm caster sugar
  • 75.08 gm extra virgin olive oil
  • 375.00 ml pizza sauce
  • 500.00 ml grated mozzarella
  • 285g jar piquillo peppers, drained, sliced
  • 1 small red onion, thinly sliced
  • 6 raw chorizo sausages
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and line 4 large baking trays with baking paper.
  • In a bowl, mix together flour, yeast, and sugar. Season with salt and pepper, then create a well in the center. Pour in oil and 1 cup of warm water. Mix thoroughly until a soft, sticky dough forms, adding more warm water as needed.
  • If necessary, transfer the dough to a generously floured surface. Knead for 5 minutes, incorporating more flour if the dough is too sticky.
  • Divide the dough into 12 equal portions. Roll out 6 portions into 10cm rounds and place them onto 2 prepared trays. Cover the remaining dough portions with plastic wrap. Roll out the remaining dough portions and place them on the remaining prepared trays. Spread pizza sauce evenly on each dough round. Sprinkle half of the mozzarella on top. Add peppers, onions, and small pieces of sausage meat. Finish by sprinkling the remaining mozzarella on top and season with salt and pepper.
  • Bake until the crust is golden and crisp and the cheese is melted, about 20 minutes.
  • In a bowl, mix pesto and vinegar. Drizzle over the bruschetta pizzas, sprinkle with oregano, and serve.
