Spicy Sri Lankan-style slow cooker potatoes - an easy, flavorful side dish in large quantities.
Ingredients:
  • salt and ground black pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 green chile peppers, thinly sliced
  • 1 tablespoon mustard seeds
  • 1 tablespoon cumin seeds
  • 1 teaspoon white sugar
  • 1 clove garlic, minced
  • 8 potatoes, peeled and cubed
  • 2 tablespoons red pepper flakes
Instructions:
  • Start by generously drizzling olive oil at the base of a slow cooker, creating a flavorful foundation. Spread a bed of onion slices, then add green chile peppers, mustard seeds, cumin seeds, sugar, minced garlic, salt, and pepper for a burst of savory goodness. Carefully layer potatoes on top, and don't forget to season each layer with a sprinkle of salt and red pepper flakes for a delightful kick.
  • Cook on High for 3 1/2 to 4 hours until potatoes are tender. Gently stir before serving.
