Exciting rum and spicy red pepper flakes sauce elevate this fluffy French toast.
Ingredients:
  • 1/2 cup butter
  • 1/2 cup packed dark brown sugar
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons dark rum
  • 4 bananas, cut diagonally into 1/2-inch-thick slices
  • 3 whole eggs
  • 2 egg yolks
  • 1/2 cup milk
  • 1/4 cup whipping cream or half-and-half
  • 1 teaspoon vanilla
  • 3 tablespoons unsalted butter
  • 6 slices thick-sliced bread
Instructions:
  • In a 10-inch skillet with a lid, melt 1/2 cup of butter over medium heat. Stir in brown sugar and pepper flakes until the brown sugar blends in smoothly. Remove the skillet from heat and whisk in rum until the mixture is smooth. Cover the skillet and set it aside.
  • In a spacious bowl, whisk the whole eggs and egg yolks until well combined. Mix in the milk, cream, and vanilla, continuing to whisk until thoroughly blended.
  • Melt 1 tablespoon of unsalted butter in a 10-inch or 12-inch skillet over medium heat. Dip bread slices into egg mixture, ensuring they are well coated, then place in the skillet. Cook for about 3 minutes on each side until golden brown. Add more butter as needed for each batch.
  • Once the French Toast is on the stove, gently combine sliced bananas with the brown sugar-rum mixture. Cook over medium-low heat for roughly 2 minutes, gently tossing, until the bananas are tender.
  • Plate the French Toast and generously drizzle with the decadent Banana-Rum Sauce.
