Spicy sugar-glazed salmon with fresh zucchini salad - a deliciously easy weeknight meal.
Ingredients:
  • 9.60 gm coconut sugar
  • 2.50 gm ground cumin
  • 2.50 gm smoked paprika
  • 2.40 gm sea salt flakes
  • 1/4 tsp dried chilli flakes
  • 4 Salmon Skin On Fillets
  • Lemon wedges, to serve
  • 325g zucchini, cut into 5mm-thick slices
  • 325g squash, cut into 5mm-thick slices
  • 400g can cannellini beans, rinsed, drained
  • 250.00 ml fresh mint leaves, coarsely torn
  • 2 green shallots, thinly sliced
  • 20.60 gm white Italian dressing
  • 21.00 gm fresh lemon juice
Instructions:
  • Heat up a barbecue grill or chargrill pan on medium-high. Mix sugar, cumin, paprika, salt, and chili in a small bowl. Coat salmon with olive oil and season the flesh side with the spice mixture.
  • In a large bowl, combine zucchini and squash. Drizzle half of the oil and season generously. Grill, using a barbecue spatula to turn halfway through, until charred and just tender, about 4 minutes. Transfer to a serving bowl.
  • Sear salmon, starting with the skin-side up, flipping halfway through, for 4-5 minutes for medium doneness or until cooked to your preference. Plate the salmon.
  • Combine beans, mint, shallot, dressing, lemon juice, and remaining oil with zucchini and squash in a bowl. Gently toss to mix. Plate salad and salmon on serving dishes. Serve with lemon wedges.
