Spicy tomato salsa with crackers

Spice up your party with this quick and easy tomato salsa appetizer!
Ingredients:
  • 9.20 gm olive oil
  • 6 green shallots, thinly sliced
  • 2 small fresh red chillies, halved, deseeded, finely chopped
  • 20.00 ml yellow mustard seeds
  • 6 medium (about 900g) ripe tomatoes, roughly chopped
  • 5.00 gm caster sugar
  • 62.50 ml loosely packed fresh basil leaves, torn
  • Salt & ground black pepper, to taste
  • 1 100g pkt sesame rice crackers (Sakata brand)
Instructions:
  • In a large saucepan over medium heat, heat the oil until shimmering. Add the green shallots, chilies, and mustard seeds, and cook, stirring frequently, until the green shallots soften, about 5 minutes.
  • Combine the tomatoes and sugar in a saucepan and bring to a vigorous boil over high heat, while stirring occasionally. Lower the heat to medium and simmer for 15 minutes, stirring occasionally, until the mixture has thickened.
  • Pour the mixture into a large heatproof bowl and let it cool for 10 minutes. Gently fold in the fresh basil and season with salt and pepper to taste.
  • Serve the mixture in individual bowls with a side of rice crackers.
