Delicious turkey pasta with sun-dried tomatoes and olives by Curtis Stone. Family favorite guaranteed!
Ingredients:
  • 500g turkey mince
  • 1 small brown onion, finely chopped
  • 100g semi-dried tomatoes, cut into thirds (from the deli)
  • 125.00 gm water
  • 1/4 tsp dried chilli flakes
  • 80g Mediterranean pitted olives, cut in half (from the deli)
  • 400g can whole peeled italian tomatoes, finely chopped
  • 350g penne pasta
  • 2 cloves garlic, finely chopped
Instructions:
  • In a large saucepan, heat olive oil over medium-high heat. Cook turkey mince until browned, breaking up large chunks. Add onion and garlic, and cook until lightly browned, about 4 minutes.
  • Combine semi-dried tomatoes, water, olives, dried chilli flakes, and tomatoes in a pot. Season to taste. Simmer until the sauce thickens, about 10 minutes.
  • Simultaneously, prepare pasta following the instructions on the packet.
  • Combine the pasta with the flavorful sauce and portion into 4 bowls for an elegant presentation.
