Spicy udon noodles

Spice up Monday night noodles with Sichuan seasoning!
Ingredients:
  • 3 x 270g pkts udon noodles
  • 36.80 gm vegetable oil
  • 1 bunch green shallots, thinly sliced
  • 1.25 gm Sichuan seasoning
  • 2 x 200g pkts Japanese tofu, sliced
  • 80ml (1/3 cup) tamari (wheat-free soy sauce)
  • 40.00 ml sesame oil
  • 150g snow peas, ends trimmed
  • 150g sugar snap peas, topped
Instructions:
  • Boil noodles in a saucepan for 8 minutes until tender. Then, refresh them under cold running water and drain.
  • - Heat vegetable oil in a wok over medium-high heat, then sauté shallots for 1 minute. - Add noodles, seasoning, and tofu; stir-fry for 8 minutes. - Finish by stirring in tamari, sesame oil, and peas for 2-3 minutes until heated through. - Serve hot.
