Indulge in a flavorful baked risotto with savory sausage for a satisfying weeknight meal.
Ingredients:
  • 2x 375g pkts pork sausages
  • 9.20 gm olive oil
  • 440g (2 cups) arborio rice
  • 2 chicken style stock cubes, crumbled
  • 750ml (3 cups) water
  • 50g baby spinach leaves
  • 25g (1/3 cup) finely grated parmesan
  • 20.00 ml chopped fresh continental parsley
Instructions:
  • Preheat the oven to 180°C. In a hot medium frying pan, sear the sausages, turning regularly, for 5 minutes until golden and nearly cooked through. Let them cool for 5 minutes, then slice each sausage into 4 pieces.
  • Heat oil in a large flameproof casserole dish. Sauté garlic until aromatic, about 30 seconds. Add rice, stir to coat. Dissolve stock cubes in water and add to the dish, stirring well.
  • Add the delectable sausage to the dish, cover, and bake for 15 minutes or until the rice reaches perfect tenderness. Gently mix in the vibrant spinach, flavorful parmesan, and fragrant parsley.
