Spring beef kebabs

Grill delicious beef skewers with fresh, seasonal vegetables like asparagus and leeks.
Ingredients:
  • 2 leeks, trimmed, cut into 1cm-thick slices
  • 800g Beef Rump, cut into 2cm pieces
  • 1 bunch asparagus, trimmed, cut into 3cm lengths
  • 2 spring onions, cut into 3cm lengths
  • 36.40 gm extra virgin olive oil
  • 15.00 gm barbecue seasoning
  • 1 Stone Baked White Pane Di Casa Loaf, sliced
  • 300g Brand Australian Baby Leaf Blend
  • 200g punnet Perino tomatoes, halved
  • 125ml dressing
Instructions:
  • Preheat the barbecue grill or chargrill on high heat.
  • Skewer leek, beef, asparagus, and onions onto 8 large skewers. Mix oil and barbecue seasoning in a small bowl, then brush over kebabs. Grill kebabs for 7 mins, flipping occasionally, until cooked to your preference. Toast bread for 2 mins each side or until charred. Place on a plate, cover to keep warm, and enjoy.
  • Grill the leek, asparagus, and onion until just tender, for about 2 minutes.
  • Combine the fresh salad leaves with smoky barbecued vegetables, juicy tomatoes, and a flavorful dressing. Serve the delicious kebabs alongside the salad and warm bread.
