Chef John's secret recipe for refreshing fair-style homemade lemonade.
Ingredients:
  • 6 lemons
  • 1.25 cups white sugar
  • 5 cups cold water
Instructions:
  • Wash lemons, then use a vegetable peeler to remove all the zest. Set aside the peeled lemons. Place the lemon zest in a bowl, add sugar, and toss to combine. Cover and let it sit for at least 2 hours or overnight.
  • In a pot over high heat, boil water. Turn off heat and gently pour in the lemon-sugar mixture. Stir well and allow it to rest until the sugar is fully dissolved, approximately 5 minutes.
  • Strain the mixture back into the bowl through a mesh strainer and remove the zest. Allow it to cool at room temperature for 20 to 30 minutes.
  • Halve the lemons and extract their juice into a bowl. Transfer the lemonade to a pitcher, cover, and refrigerate until well-chilled, for a minimum of 2 hours. Serve over ice.
