Banana-infused chocolate fudge brownies, a decadent state fair champion!
Ingredients:
  • cooking spray
  • 0.75 cup sifted all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 0.25 teaspoon salt
  • 1 pinch salt
  • 6 tablespoons salted butter
  • 5 ounces semisweet chocolate
  • 1 ounce bittersweet chocolate
  • 1 cup packed light brown sugar
  • 2 eggs, lightly beaten
  • 0.5 large banana, mashed
  • 0.5 cup chopped toasted walnuts
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C), then generously coat the bottom of an 8x8-inch metal baking pan with cooking spray.
  • Combine the flour, cocoa, 1/4 teaspoon salt, and a pinch of salt in a bowl, and set aside.
  • In a medium saucepan, gently melt the butter over low heat. Stir in the semisweet and bittersweet chocolate until smooth. Take the saucepan off the heat and let it sit for 2 to 3 minutes.
  • Combine brown sugar, eggs, and banana by hand until blended, approximately 1 minute. Stir in the melted chocolate mixture, mixing well for 1 more minute. Gradually incorporate the flour mixture into the chocolate, stirring until just combined. Gently fold in walnuts and chocolate chips before spreading the batter into the prepared pan.
  • Bake in the preheated oven for 35 to 40 minutes or until a toothpick inserted into the center comes out with moist crumbs. Allow it to cool in the pan on a wire rack for at least 2 hours before cutting.
