Elevate your cooking with homemade teriyaki flank steak: marinate, sear, and slice for a delicious meal at home.
Ingredients:
  • 1/3 cup mirin rice wine
  • 1/3 cup sake
  • 1/3 cup soy sauce (if cooking gluten-free, use gluten-free soy sauce)
  • 1 tablespoon sugar
  • 1 tablespoon grated fresh ginger
  • 1 1/2 to 2 pounds flank steak or skirt steak
  • Olive oil or canola oil
Instructions:
  • Prepare the steak marinade by mixing mirin, sake, soy sauce, sugar, and grated ginger in a shallow bowl. Add the steak to the marinade and refrigerate for at least one hour, or up to 48 hours. If marinating for longer, ensure it stays chilled until an hour before cooking.
  • Prepare teriyaki sauce: After removing the steak from the marinade, place it on a plate. In a saucepan, bring the reserved marinade to a boil. Simmer for 10 minutes until it reduces to a glossy teriyaki glaze.
  • Cook the steak to perfection: Choose your preferred method - grilling or pan frying. For grilling, oil the grates and heat the grill on high. If pan frying, use a large cast iron pan on high heat. Pat the steak dry, rub with olive oil, then place it on the hot surface. Sear for 3 to 5 minutes per side until well browned. Finally, baste the steak with teriyaki sauce.
  • Allow the steak to rest: Once the steak is nicely seared on both sides, take it off the heat, cover it with foil, and allow it to rest for 10 to 15 minutes.
  • Prepare the steak: Slice the steak in half along the grain. Then, thinly slice at a slight diagonal angle to break up the muscle fibers. Save any juices and add them to the teriyaki sauce.
