Quick, simple and delicious steamed salmon - a perfect family meal for busy weeknights.
Ingredients:
  • 90.75 gm sweet chilli sauce
  • 1 tsp sesame oil
  • 12.20 gm fish sauce
  • 4 small salmon fillets
  • Steamed jasmine rice, to serve
  • Lime wedges, to serve
  • 3 Lebanese cucumbers
  • 1 green onion, thinly sliced
  • 250.00 ml coriander leaves
  • 125.00 ml mint leaves, roughly chopped
Instructions:
  • Mix sweet chili sauce, sesame oil, and fish sauce in a bowl. Place a salmon fillet on a large piece of baking paper. Pour the sweet chili mixture over the salmon. Fold and twist the paper to make sealed parcels.
  • Gently nestle the parcels in a steamer basket above a pot of gently simmering water. Steam with the lid on for 8 to 10 minutes until perfectly cooked.
  • Prepare the cucumber salad by using a vegetable peeler to create long, thin ribbons of cucumbers. Place them in a bowl and mix in green onions, coriander, and mint. Season with salt and pepper, then toss everything together to combine.
  • Lay the fish on serving plates and generously drizzle with the delicious juices from the parcels. Accompany with a refreshing cucumber salad, fluffy rice, and zesty lime wedges.
