Sticky pineapple and sweet chilli dipping sauce recipe

Irresistible sticky pineapple sweet chili dipping sauce.
Ingredients:
  • 1/4 small pineapple, peeled, finely chopped
  • 68.75 gm sweet chilli sauce
  • 62.50 ml rice wine vinegar
  • 40.00 gm caster sugar
  • 1 lemongrass stalk, trimmed, bruised
  • 1cm piece fresh ginger, finely grated
  • 20.00 ml chopped fresh coriander leaves
Instructions:
  • In a small saucepan over medium heat, combine pineapple, sweet chilli sauce, vinegar, sugar, lemongrass, ginger, garlic, and 1/2 cup water. Cook and stir for 1 minute until sugar is dissolved. Increase heat to medium-high and bring to a boil. Continue to boil and stir occasionally for 20 minutes until the sauce slightly thickens.
  • Take the mixture off the heat and let it cool completely. Remove the lemongrass and discard. Add coriander and serve.
