Sticky pork ribs recipe

Delicious BBQ sticky pork ribs - a crowd-pleasing favorite!
Ingredients:
  • 2kg pork ribs, silver skin removed (ask your butcher to do this for you)
  • Coleslaw, to serve
  • 20.00 ml finely grated fresh ginger
  • 20.00 ml crushed garlic
  • 5.00 gm smoked paprika
  • 20.00 ml dried chilli flakes
  • 1 red onion, finely diced
  • 125ml soy sauce
  • 100g brown sugar
  • 9.60 gm sea salt
  • 18.20 gm extra virgin olive oil
  • 20.00 ml freshly cracked black pepper
  • 1/4 bunch fresh coriander leaves, finely chopped
  • 3 spring onions, trimmed, finely chopped
  • 3 fresh (scuds or Thai) red chillies, thinly sliced, optional (see notes)
Instructions:
  • Combine the ingredients in a large bowl to create the sticky rub marinade.
  • Place the ribs in a spacious dish. Drizzle the marinade over the ribs and coat them evenly. Cover with plastic wrap and refrigerate overnight or for up to 48 hours, rotating the meat in the marinade every 6 hours, if possible.
  • Preheat your barbecue to 200C. Add hickory wood chips to the smoker box as instructed in the notes. Allow the chips to smoke for a few minutes, then lower the heat to 120-140C.
  • Grill the ribs with the hood closed for 2 to 3 hours, adding wood chips to the smoker box every 45 minutes to maintain the smoke, if needed. (Refer to notes for additional guidance)
  • - Simmer the remaining marinade in a saucepan on low heat until thickened into a glossy glaze. - Glaze the pork ribs every 15 minutes during the last hour of cooking. - Ribs should be tender enough to easily pull apart. - Slice between the bones and serve with coleslaw.
