Sticky ribs

Tender ribs soaked in sweet and spicy marinade for irresistible flavor.
Ingredients:
  • 4 x 600g pork rib racks
  • 125ml (1/2 cup) beer
  • 80g (1/2 cup, lightly packed) brown sugar
  • 60ml (1/4 cup) Worcestershire sauce
  • 60ml (1/4 cup) treacle
  • 60ml (1/4 cup) golden syrup
  • 20.00 ml mustard powder
  • 10.00 gm smoked paprika
  • Few drops red Tabasco pepper sauce
  • Lemon halves, grilled, to serve
Instructions:
  • In a large bowl, layer the ribs. Mix beer, sugar, Worcestershire sauce, treacle, golden syrup, mustard powder, paprika, and Tabasco in a separate bowl. Pour the mixture over the ribs and evenly coat them. Cover and refrigerate for at least 2 hours or overnight to marinate.
  • Separate the ribs from the marinade, keeping the marinade aside. Transfer the marinade to a saucepan and gently heat over low flame. Stir occasionally and let it simmer for 5-10 minutes until it thickens a bit.
  • Prepare a barbecue grill or flat plate by lightly spraying it with oil and preheating it on medium-low heat. Cook the ribs for 45-50 minutes, turning and basting them regularly with the marinade, until they are sticky and golden. Cut into pieces and serve with lemon halves.
