Quickly stir-fry fall mushrooms with garlic for a flavorful dish with a hint of heat.
Ingredients:
  • 3 teaspoons Chinese light soy sauce
  • 2 tablespoons cool water (if needed)
  • 3 tablespoons vegetable oil
  • 1/4 cup thinly sliced garlic (from about 6 cloves)
  • 12 ounces (about 5 very loosely packed cups) maitake mushrooms, pulled into small 2-inch chunks
  • 1-2 teaspoons chile oil (method above) or chile crisp
Instructions:
  • Prepare the ingredients: Pour the soy sauce into a small bowl, then do the same with the water. Set both bowls aside.
  • Heat the oil in a wok or large skillet over high heat until it shimmers. Cook the garlic, stirring frequently, until golden and just beginning to turn light brown, about 1 minute. Use a slotted spoon or stirring spoon to remove the garlic, leaving the oil. Set aside.
  • Sauté the mushrooms in oil for 3 minutes, flipping and stirring occasionally, pressing them against the sides of the wok to brown. If needed, drizzle in water to help them soften.
  • Drizzle soy sauce over mushrooms, cook for 2 more minutes until fully absorbed and mushrooms are soft and tender.
  • Drizzle in the aromatic chile oil and thoroughly mix to combine all flavors.
