Ingredients:
  • 4 ripe peaches (free stone variety if possible)
  • 30g (1 1/2 tbsp) butter or margarine
  • 35g (1/4 cup) slivered almonds
  • 16.00 gm soft brown sugar
  • 8 vanilla ice-cream slices, to serve
Instructions:
  • Halve peaches, remove pits, and slice into thick wedges. In a frying pan over medium-high heat, melt 2 teaspoons of butter. Add almonds and cook for 1-2 minutes, stirring continuously until they turn golden. Remove almonds from pan and set aside.
  • Use a paper towel to wipe the pan clean. Then, introduce the remaining 20g (1 tablespoon) of butter or margarine, vanilla essence, and brown sugar. Stir everything together. Add peach wedges and cook for 2-3 minutes, tossing regularly, until the sugar is fully dissolved.
  • Take the pan off the stovetop and gently mix in the almonds, following the microwave tip. Let it cool for 3-5 minutes before drizzling over the ice cream slices.
