Succulent prawns, mushrooms, and sweet peas on fluffy sushi rice.
Ingredients:
  • 250.00 gm sushi rice
  • 5.00 gm caster sugar
  • 1.20 gm salt
  • 62.50 ml mirin
  • 9.20 gm vegetable oil
  • 2 eggs, beaten
  • 10.60 gm soy sauce
  • 1/2 tsp sesame oil
  • 100g shiitake mushrooms, sliced
  • 150g snow peas, trimmed, halved diagonally
  • 1kg green prawns, peeled, tails intact
Instructions:
  • 1. Rinse rice in a bowl of cold water and let it soak for 30 minutes. Drain well. 2. Transfer rice to a saucepan and cover with 2 1/2 cups of cold water. 3. Bring to a boil over medium-high heat, then reduce to low heat. 4. Simmer rice uncovered for 15 minutes. 5. Remove from heat and let it stand covered for 5 minutes to absorb any remaining liquid.
  • In a microwave-safe jug, mix sugar, salt, and 1 tablespoon mirin. Heat on HIGH for 40 seconds until sugar dissolves. Allow to cool. Spread rice on a baking tray and drizzle with the mirin mixture. Stir well to coat evenly.
  • 1. Preheat a wok over medium-high heat and add 1/2 teaspoon of vegetable oil. Swirl to coat. 2. Pour half of the beaten egg into the wok and swirl to create a thin omelette. Cook for 1 minute or until set. 3. Transfer the cooked omelette onto a cutting board and repeat with the remaining egg. 4. Roll up the omelettes tightly and slice them thinly crossways.
  • In a wok, splash in 1 cup of cold water, then stir in the 2 tablespoons of mirin, soy sauce, and sesame oil. Bring to a boil. Toss in the mushrooms and cook for 1 minute until tender. Using a slotted spoon, transfer the mushrooms to a plate. Next, throw in the snow peas and cook for 1 to 2 minutes until they are just tender. Combine the snow peas with the mushrooms. Drain and wipe the wok clean.
  • Heat the remaining vegetable oil in a wok until it shimmers. Stir-fry the prawns in two batches for about a minute each, or until they turn pink. Serve by spooning rice into bowls and topping with mushrooms, peas, prawns, and omelette strips. Enjoy your meal!
