Whip up a quick and flavorful prawn stir-fry with fresh spring vegetables in just 20 minutes - perfect for a fast and delicious meal!
Ingredients:
  • 1/2 bunch choy sum, washed
  • 6.00 gm sesame seeds
  • 9.20 gm peanut oil
  • 8 large green prawns, peeled, deveined
  • 120g green beans, topped, tailed, halved
  • 1/2 small red capsicum, deseeded, thinly sliced
  • 3 tsp kecap manis (sweet Indonesian soy sauce)
  • 1 tsp sesame oil
  • 70g (1/3 cup) jasmine rice, cooked, to serve
Instructions:
  • Separate the choy sum leaves from the stems, cutting the stems into 5cm lengths. Gently shred the leaves.
  • Toast sesame seeds in a dry wok over medium heat, tossing frequently, for about a minute until fragrant. Remove from heat.
  • In a hot wok, sear the prawns in peanut oil until they are orange and cooked through, about 2 minutes. Remove them from the wok.
  • In a hot wok, stir-fry choy sum stems, beans, capsicum, and garlic for 2 minutes over medium-high heat. Add choy sum leaves, kecap manis, and sesame oil, continue tossing for another 2 minutes until leaves are wilted. Lastly, add sesame seeds and prawns, toss for 1 more minute until heated through. Serve with jasmine rice right away.
