Try Chef John's easy stovetop stuffing with French bread and herbs for a stress-free holiday side dish.
Ingredients:
  • 8 cups cubed day-old white French bread, dried
  • 1.5 sticks unsalted butter, divided
  • 1 large yellow onion, diced
  • 1.5 cups diced celery
  • 1.5 teaspoons kosher salt
  • 1.5 teaspoons dried sage
  • 0.5 teaspoon dried thyme leaves
  • 2.5 cups turkey broth
  • 0.5 cup chopped fresh Italian parsley
  • 1 tablespoon minced fresh rosemary
  • 1 large egg, beaten
  • 1 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper
Instructions:
  • Place the dry bread cubes into a large mixing bowl, ready for use.
  • In a large skillet over medium-high heat, melt 1 stick of butter. Add onions, celery, and salt; sauté until onions are soft and translucent, around 5 minutes. Stir in sage, thyme, and broth. Bring to a boil.
  • Remove the saucepan from the heat and drizzle over the bread cubes. Mix using a large spoon until the bread is fully soaked.
  • Allow the mixture to rest in the bowl for 15 minutes, giving it an occasional toss.
  • Combine parsley, rosemary, egg, black pepper, and cayenne in the bowl, mixing until evenly blended. Let the mixture cool completely, stirring occasionally.
  • In a large nonstick skillet over medium heat, melt the remaining 1/2 stick of butter. Add the stuffing mixture and press it down with a spatula. Cook until a golden brown crust forms, approximately 5 minutes, then flip the stuffing in small sections using the spatula.
  • Cook covered for about 5 minutes, then uncover and toss. Keep cooking and tossing until you achieve the perfect amount of browning and crusting.
  • Transfer to an elegant casserole dish or a beautiful serving plate.
