Strawberry and blueberry roll ups recipe

Kid-approved fruity snack roll-ups, perfect for lunchboxes!
Ingredients:
  • 250g strawberries
  • 21.00 gm lemon juice
  • 250g blueberries
Instructions:
  • Preheat your oven to 100°C and line two large baking trays (27cm x 39cm) with silicone mats or baking paper.
  • In a food processor, blend together strawberries, half the sugar, and half the lemon juice until smooth. Spread the mixture evenly onto a lined tray, ensuring it is about 1mm thick and covers the entire base of the tray.
  • Blend the blueberries, leftover sugar, and remaining lemon juice in a fresh food processor until velvety. Spread the mixture evenly over the lined tray, ensuring it reaches a 1mm thickness and covers the entire base.
  • Bake for 2-3 hours, swapping trays halfway, until centres are no longer tacky. Let cool completely.
  • Peel the fruit sheets off the mats or paper, then use kitchen scissors to cut them into ribbons before rolling them up and securing with kitchen string.
