Add a touch of almond extract to enhance the flavor of the frozen-berry quick bread.
Ingredients:
  • 2 eggs, separated
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon almond extract
  • 1 (10 ounce) package frozen strawberries - thawed, drained and juice reserved
Instructions:
  • Prepare a 9 x 5 inch glass loaf pan by greasing it lightly and lining it with greased waxed paper. Preheat your oven to 350 degrees F (175 degrees C).
  • Combine butter or margarine, sugar, and almond extract in a large bowl until creamy. Gradually add egg yolks, beating well after each addition. Sift flour, baking powder, and soda into the mixture, then mix until fully incorporated. Stir in 1/4 cup of strawberry juice, and gently fold in the strawberries.
  • In a separate bowl, whisk egg whites until they form stiff peaks. Gently fold the whipped egg whites into the strawberry batter. Pour the batter into the prepared pan and tap it lightly to release any air bubbles.
  • Bake for 50 to 60 minutes until a tester inserted in the center comes out clean. Let it cool for 15 minutes in the pan, then transfer to a wire rack to cool completely before slicing.
