Indulgent strawberry cheesecake bites dipped in rich chocolate, with a creamy filling and buttery graham cracker topping.
Ingredients:
  • 2 tablespoons graham cracker crumbs
  • 1 (8 ounce) package cream cheese
  • 0.5 cup confectioners' sugar
  • 2 teaspoons vanilla extract
  • 12 large fresh strawberries, hulled
  • 2 (1 ounce) squares semisweet chocolate chips
  • 1 teaspoon canola oil
Instructions:
  • Prepare a baking sheet lined with waxed paper and set aside. Place graham cracker crumbs in a shallow bowl.
  • Mix cream cheese, confectioners' sugar, and vanilla until velvety smooth. Transfer the mixture into a piping bag with a large round tip.
  • Using a sharp paring knife, hollow out the top of each strawberry in a cone shape. Fill each strawberry with about 1 tablespoon of the cream cheese mixture, allowing it to overflow slightly. Flip the strawberries upside down and dip the filling into crumbs until coated.
  • Heat the chocolate and canola oil in a microwave-safe glass or ceramic bowl in 30-second increments, stirring each time, until smooth and warm, for about 1 to 3 minutes (adjust based on your microwave's power).
  • Coat strawberry tips in decadent melted chocolate, then lay them on the baking sheet and chill until firm.
