Whipped cream cheese, fresh strawberries, and Jell-O top buttery shortbread for a stunning summer dessert.
Ingredients:
  • 0.5 cup salted butter, at room temperature
  • 0.5 cup powdered sugar
  • 1 cup all-purpose flour
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
  • 0.5 cup water
  • 1 tablespoon cornstarch
  • 0.5 (3 ounce) package strawberry-flavored gelatin (such as Jell-O®)
  • 2 cups sliced fresh strawberries
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • In a medium bowl, combine butter, powdered sugar, and vanilla extract. Beat until mixture is smooth. Add flour and mix until dough forms and is no longer dry.
  • Spread the dough evenly into an 8x8-inch pan using your fingers and prick it all over with a fork to release steam.
  • Place in the preheated oven and allow the edges to achieve a beautiful golden brown color, approximately 20 minutes. Once ready, take out from the oven and let it cool down completely.
  • Prepare the filling: In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in whipped topping until well combined. Chill while the shortbread crust cools and as you get the strawberry topping ready.
  • In a small pan over medium heat, combine water, sugar, and cornstarch. Bring to a boil while whisking constantly. Stir in gelatin until fully blended. Remove from heat and let it cool, stirring occasionally to prevent a skin from forming.
  • Smooth the cream cheese mixture onto the cooled shortbread, layer with fresh sliced strawberries, pour the gelatin mixture over them evenly, and chill until firm. Slice into squares.
