Overnight strawberry French toast made with fresh or frozen strawberries, perfect for a special brunch.
Ingredients:
  • 0.5 cup sliced almonds
  • 1 (10 ounce) package frozen strawberries - thawed, drained, and juice reserved
  • water as needed
  • 0.5 cup white sugar
  • 2 tablespoons cornstarch
  • 1 (8 ounce) package cream cheese, softened
  • 2 tablespoons white sugar
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 3 eggs, beaten
  • 1.5 teaspoons white sugar
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 loaf Italian bread
  • 1 tablespoon butter, or as needed
Instructions:
  • Toast the almonds in a skillet on medium-high heat until fragrant, about 3 to 5 minutes, stirring constantly.
  • Combine reserved strawberry liquid with water to make 1 cup of liquid.
  • Combine 1/2 cup of sugar and cornstarch in a saucepan over medium heat until well mixed. Slowly incorporate strawberry liquid into the mixture, cooking and stirring continuously until it becomes clear and thick, which should take about 3 to 5 minutes. Finally, fold in the strawberries and almonds.
  • In a bowl, mix cream cheese, 2 tablespoons sugar, and vanilla extract until smooth. In another bowl, whisk together milk, eggs, 1 ½ teaspoons sugar, cinnamon, and nutmeg.
  • Cut the bread into 1 ½-inch intervals, stopping 3/4 of the way through, then make a pocket in the center of each slice. Fill each pocket with 1 rounded tablespoon of the cream cheese mixture, then cut each slice all the way through to separate from the loaf.
  • Coat bread slices thoroughly in the egg mixture.
  • Heat butter on a griddle over medium-high heat. Cook bread slices in batches until golden brown on both sides, about 2 to 5 minutes per side. Serve French toast with strawberry-almond mixture.
