Strawberry Hand Pies

Simple strawberry hand pies with store-bought dough for a quick treat.
Ingredients:
  • 1.5 cups diced fresh strawberries
  • 1 tablespoon sugar
  • 2 teaspoons cornstarch
  • 1 (14.1 ounce) package pastry for a 9 inch double crust pie
  • 1 large egg, beaten
  • 1 teaspoon confectioners' sugar
Instructions:
  • Preheat the oven to 400°F (200°C). Prepare a baking sheet with parchment paper.
  • In a bowl, mix strawberries with sugar, cornstarch, and vanilla extract; allow the strawberries to develop flavor.
  • Place the 2 pie crusts on a floured work surface and roll them out to 12-inch circles. Cut each circle into 2 squares, then each square into 3 rectangles to make a total of 6 rectangles. Spoon 2 tablespoons of strawberry mixture onto one half of the long ends of each rectangle, leaving a border around the edge.
  • Seal the strips by brushing beaten egg around the edges, folding the dry end over the strawberry mixture end. Press the edges together firmly with a fork, then cut a few slits on the top of each pie to release steam.
  • Use the leftover egg wash to gently glaze the hand pies before placing them on the prepared baking sheet.
  • Bake in the preheated oven for 13 to 15 minutes or until golden brown. Transfer the pies to a wire rack to cool. Sprinkle with confectioners' sugar, if desired. Serve warm or at room temperature.
