Strawberry heart tart

Delight Mom any day with a recipe the kids can assist with.
Ingredients:
  • 100g butter, at room temperature
  • 100g (1/2 cup) caster sugar
  • 100g (1 cup) almond meal
  • 40g (1/4 cup) plain flour
  • 4.40 gm vanilla extract
  • 2 sheets frozen puff pastry, just thawed
  • 500g strawberries, hulled, thinly sliced, drained on paper towel
  • 115g (1/3 cup) strawberry jam, warmed, strained
  • Crème fraîche, to serve
Instructions:
  • Preheat your oven to 200C/180C fan forced and place 2 baking trays inside to get nice and hot.
  • Mix butter, sugar, and egg with electric beaters until pale and creamy. Then blend in almond meal, flour, and vanilla until combined.
  • Lay a pastry sheet on a piece of baking paper. Cut out a large heart shape, leaving a 1cm border. Prick the pastry with a fork. Spread the mixture over the hearts and top with strawberry slices. Transfer the hearts on baking paper to hot trays. Bake for 20 minutes, switching trays midway, until pastry is crisp. Brush with jam and serve with a dollop of crème fraîche.
