Homemade strawberry jam bursting with fruity flavor, no pectin needed. Enjoy summer anytime!
Ingredients:
  • 2 pounds fresh strawberries, hulled
  • 4 cups white sugar
  • 0.25 cup lemon juice
Instructions:
  • Crush strawberries in batches in a wide bowl until you reach 4 cups of mashed berries.
  • In a heavy-bottomed saucepan, mix together the mashed strawberries, sugar, and lemon juice. Stir over low heat until the sugar is completely dissolved. Increase the heat to high and bring the mixture to a vigorous boil. Cook while stirring occasionally until the temperature reaches 220 degrees F (105 degrees C).
  • Test the jam's readiness after 10 to 15 minutes by spooning a small amount onto a frozen plate. Allow it to rest for 1 to 2 minutes. If the jam sets and has a gel-like consistency, it is done. Keep cooking if the jam remains thin and runny.
  • Pour the delicious jam into clean, hot jars, leaving a 1/4 inch space at the top. Seal with lids and secure them tightly.
  • Fill a large stockpot halfway with water and bring to a boil with a rack placed at the bottom. Using a holder, gently lower jars spaced 2 inches apart into the boiling water. Ensure the jars are covered with at least 1 inch of boiling water, adding more if needed. Cover the pot, bring to a rolling boil, and process for 10 minutes. Carefully remove the jars from the stockpot and let cool several inches apart for 12 to 24 hours. Store in a cool, dark area.
