Decadent strawberry filling made by simmering fresh strawberries with sugar and lemon. Perfect for pies, sauces, or ice cream toppings.
Ingredients:
  • 1 cup mashed strawberries
  • 0.75 cup water, or more if needed
  • 0.75 cup white sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 0.25 teaspoon salt
  • 4 cups sliced strawberries
Instructions:
  • In a saucepan, mix together mashed strawberries and water. Allow it to boil and then simmer for approximately 3 minutes.
  • Separate the juice from the cooked strawberries, then adjust with water to make a total of 1 cup of juice. Remove and discard the pulp.
  • In a saucepan, mix sugar, cornstarch, lemon juice, and salt. Then, add strawberry juice and stir over medium heat until the mixture is clear and thick, about 3-5 minutes. Cool slightly after removing from heat.
  • Incorporate the sliced strawberries into the luscious strawberry sauce.
