Easy no-bake strawberry pie in a graham cracker crust, swapping gelatin for cornstarch for a simpler and tastier twist.
Ingredients:
  • 2 pounds fresh strawberries
  • 0.75 cup white sugar
  • 0.75 cup water
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 (9 inch) deep-dish graham cracker pie crust
  • 1 (8 ounce) tub whipped topping (such as Cool Whip®)
Instructions:
  • Slice 3/4 of the strawberries and transfer to a bowl.
  • Blend the rest of the strawberries in a food processor until smooth. Pour into a saucepan over medium heat. Add sugar, water, cornstarch, and lemon juice. Mix well and bring to a boil, stirring frequently for about 5 minutes. Keep stirring constantly until the mixture thickens to a jam-like consistency, approximately 5 more minutes. Drizzle this over the sliced strawberries in the bowl and mix together to create the filling.
  • Smooth the luscious filling into the pie shell and chill for about 3 hours until perfectly set. Serve by slicing and topping each piece with a generous dollop of whipped topping.
