Easy and delicious strawberry pie, perfect for showcasing fresh berries. Great for after a day of berry picking!
Ingredients:
  • 1 quart fresh strawberries, hulled
  • 1 (9 inch) pie crust, baked
  • 1 cup white sugar
  • 3 tablespoons cornstarch
  • 0.75 cup water
  • 0.5 cup heavy whipping cream
Instructions:
  • Prepare all your ingredients.
  • Place half of the fresh, vibrant strawberries into the golden, flaky pastry shell, and transfer the rest of the luscious strawberries into a saucepan that's just the right size.
  • In a saucepan, combine sugar and strawberries. Heat over medium heat, stirring often, until it reaches a boil.
  • Combine cornstarch and water in a small bowl, whisking until smooth. Slowly incorporate the cornstarch mixture into the boiling strawberry mixture. Reduce heat and simmer, stirring constantly, until thickened, about 10 minutes.
  • Pour the luscious cooked strawberry mixture over the fresh berries in the flaky pastry shell. Chill in the refrigerator until firm, for a minimum of 3 hours.
  • Whisk cream until soft peaks form before serving.
  • Top each pie slice with a generous dollop of whipped cream before serving. Enjoy the delicious combination!
