Strawberry Streusel Bars

"Delicious strawberry cookie bars with a sweet streusel topping, ideal for summer indulgence."
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup cold butter, cut into pieces
  • 4 oz (half of 8-oz package) cold cream cheese, cut into pieces
  • 1/2 cup old-fashioned oats
  • 2 cups chopped fresh strawberries
  • 1/2 cup strawberry jam
  • 1 tablespoon lemon juice
  • Sweetened whipped cream, if desired
Instructions:
  • Preheat oven to 375°F and generously spray a 9-inch square pan with cooking spray.
  • Place the cookie mix in a large bowl. Using a pastry blender or fork, combine the butter and cream cheese until the mixture is crumbly (be careful not to overmix). Press 3 cups of the mixture into the bottom of the pan. Stir oats into the remaining cookie mixture and set aside. Bake the cookie base for 20 minutes, then allow it to cool for 10 minutes.
  • Combine the Filling ingredients in a medium bowl. Spread the mixture over the partially baked crust and sprinkle the reserved oat mixture on top.
  • - Bake for 26 to 30 minutes until golden brown and bubbling around the edges. Allow to cool on a rack for 30 minutes, then refrigerate for 2 hours before cutting into 4 rows by 4 rows. Serve with whipped cream if desired and store any leftovers in the refrigerator.
