Indulge in a refreshing Strawberry Syrup Fizz for the perfect icy treat.
Ingredients:
  • 20 strawberries
  • 62.50 ml fresh mint sprigs, plus extra to serve
  • 250.00 ml gin
  • 1.25 litres soda water, chilled
  • 500g strawberries, hulled, chopped
  • 215.00 gm caster sugar
  • 5.30 gm lemon juice
Instructions:
  • In each ice-cube tray compartment, gently nestle 1 vibrant strawberry. Pour water into each compartment, leaving a bit of space at the top. Allow to freeze overnight or until solid.
  • To prepare the Strawberry Syrup, combine strawberries, sugar, and 1 1/2 cups of water in a saucepan. Bring the mixture to a boil over high heat, then lower the heat and simmer covered for 10 minutes. Remove from heat and let it cool for 5 minutes before using.
  • Pass the strawberry mixture through a fine sieve lined with muslin into a large jug. Use the back of a large spoon to extract the liquid, discarding solids. Transfer the strained mixture to a clean saucepan.
  • 1. Heat pan over high heat until boiling, then lower heat to medium. 2. Let simmer uncovered for 10 minutes or until slightly thickened. 3. Remove from heat and stir in lemon juice. 4. Allow the mixture to cool for 15 minutes. 5. Seal and refrigerate until chilled.
  • In a 2.5L-capacity serving jug, combine ice cubes, mint, syrup, gin, and soda water. Mix well. Pour into glasses and garnish with additional mint.
