Healthier twist on classic stroganoff, creamy and delicious with plenty of veggies.
Ingredients:
  • 1 tablespoon oil
  • 1/2 cup chopped onion
  • 1 package (8 oz) sliced mushrooms
  • 1/2 large red bell pepper, seeded, cut into 1-inch pieces (about 3/4 cup)
  • 1/2 large green bell pepper, seeded, cut into 1-inch pieces (about 3/4 cup)
  • 2 cups milk
  • 1/2 cup hot water
  • 1 box Hamburger Helper™ stroganoff
  • 2 cups broccoli florets
  • 10 cherry tomatoes, cut in half (about 3/4 cup)
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Heat oil in a 12-inch nonstick skillet over medium-high heat. Sauté onion, mushrooms, and bell peppers for 4 to 5 minutes until tender crisp. Mix in milk, hot water, and sauce mix from the Hamburger Helper™ box. Add uncooked pasta and broccoli. Bring to a boil, then simmer covered for about 10 minutes until pasta is tender and sauce thickens. Remove from heat and fold in tomatoes and sour cream.
  • Garnish with fresh parsley.
