Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Halve the potatoes lengthwise and carefully hollow out the centers, ensuring the skins remain intact and stable.
  • Place the raw potato flesh in a food processor with onion, 1/4 cup of Cheddar cheese, sour cream, garlic, salt, and pepper. Blend until a rough puree forms (avoid over-blending). Scoop mixture back into potato shells, top with remaining Cheddar and breadcrumbs.
  • Roast in the oven until soft, typically around 1 hour.
