Raisin cake made with applesauce and brown sugar substitute.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 1.5 cups unsweetened applesauce
  • 0.75 cup brown sugar twin
  • 2 eggs
  • 0.5 cup raisins
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C, then generously coat an 8x4 inch loaf pan with cooking spray.
  • Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt then set aside.
  • Whisk the eggs until fluffy, then mix in sugar substitute, applesauce, and vanilla.
  • Combine the flour mixture with the batter until a smooth consistency is achieved, then gently incorporate the raisins.
  • Transfer the batter into a loaf pan and bake at 350°F (175°C) for approximately one hour, or until a toothpick inserted into the cake comes out clean.
