Summer fruit salad with ginger lime cream

Ingredients:
  • 2.3kg (about 1/2 regular) watermelon, peeled
  • 2kg pineapple, peeled
  • 80mls (1/3 cup) honey
  • 60mls (1/4 cup) lime juice
  • 1 x 300ml carton thickened cream
  • 10.00 gm caster sugar
  • 40g (2 tbsp) finely chopped crystallised ginger
  • 1 1/2 tsp finely grated lime rind
Instructions:
  • Slice the fruit into 1 cm-thick wedges and neatly arrange in a bowl or on a platter. Combine honey and lime juice using a small whisk or fork, then drizzle the mixture over the fruit.
  • Chill in the fridge for 3-4 hours.
  • Prepare the ginger lime cream by using electric beaters to whip the cream and sugar in a small bowl until soft peaks form. Transfer the mixture to a serving bowl and sprinkle with ginger and lime zest, gently swirling to combine.
  • Top the fruit with a dollop of the zesty ginger lime cream.
