Summer Peach, Basil & Cheddar Muffins

Savory Cheddar cheese and fresh basil complement sweet peaches in delicious baked muffins.
Ingredients:
  • 4 fresh peaches, cut into 1/2-inch pieces
  • 4 teaspoons finely minced fresh basil
  • 1 tablespoon brown sugar
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 cup shredded extra-sharp Cheddar cheese (such as Sargento® Off the Block)
  • 0.5 cup butter, room temperature
  • 7 tablespoons brown sugar
  • 2 eggs, room temperature
  • 0.25 cup shredded extra-sharp Cheddar cheese (such as Sargento® Off the Block)
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), and prepare a dozen muffin cups by greasing them or lining with paper liners.
  • Combine juicy peaches, fresh basil, and a hint of sweetness from 1 tablespoon of brown sugar in a bowl. Allow the flavors to meld together as the sugar slowly dissolves, takes about 15 minutes.
  • Combine the flour, baking powder, baking soda, and salt in a large bowl, then fold in 1 cup of Cheddar cheese.
  • Using an electric mixer, whip together the butter and 7 tablespoons of brown sugar until smooth and creamy. Add the eggs one by one until incorporated, then gently fold in the peaches. Gradually add the flour mixture to the peach mixture, stirring until just combined.
  • Fill the muffin cups with batter and top with a generous sprinkle of 1/4 cup of sharp Cheddar cheese.
  • Bake in the oven until a toothpick inserted in the middle of a muffin comes out clean, approximately 25 minutes.
